Cream Sauce Asparagus

Ingredients

  • 1 bunch asparagus
  • 1 pint sweet cream
  • 1 tbsp flour
  • salt to taste
  • cold cream for slurry

Method

  1. 1 Thoroughly wash asparagus, tie in small bunches, and boil in water until perfectly tender.
  2. 2 Drain thoroughly, untie the bunches, and arrange the stalks uniformly on a hot plate.
  3. 3 Heat the pint of sweet cream to the boiling point in a separate saucepan.
  4. 4 Rub the flour smooth with a little cold cream, stir into the hot cream with salt, and pour over the asparagus.
