Cream Puffs With Whipped Cream

Ingredients

  • 1 cup water
  • 1 cup flour
  • 4 eggs
  • 5 tablespoons Crisco
  • 1/4 teaspoon salt
  • Whipped cream, sweetened and flavored to taste
  • 1 egg, beaten (for brushing)
  • Chocolate icing (for dipping eclairs)

Method

  1. 1 In a saucepan, combine Crisco and water; bring to a boil.
  2. 2 Remove from heat, add flour and salt, and stir vigorously until the mixture leaves the sides of the pan.
  3. 3 Let cool until warm but not cold, then beat in eggs one at a time until fully incorporated.
  4. 4 Chill the dough in a cool place for one hour.
  5. 5 Pipe small rounds onto a greased baking sheet and bake at 425°F for 40 minutes.
  6. 6 Cool, split open, and fill with sweetened whipped cream.
