Cream Puffs With Whipped Cream
Ingredients
- 1 cup water
- 1 cup flour
- 4 eggs
- 5 tablespoons Crisco
- 1/4 teaspoon salt
- Whipped cream, sweetened and flavored to taste
- 1 egg, beaten (for brushing)
- Chocolate icing (for dipping eclairs)
Method
- 1 In a saucepan, combine Crisco and water; bring to a boil.
- 2 Remove from heat, add flour and salt, and stir vigorously until the mixture leaves the sides of the pan.
- 3 Let cool until warm but not cold, then beat in eggs one at a time until fully incorporated.
- 4 Chill the dough in a cool place for one hour.
- 5 Pipe small rounds onto a greased baking sheet and bake at 425°F for 40 minutes.
- 6 Cool, split open, and fill with sweetened whipped cream.
