Cream Puffs With Pastry Cream
Ingredients
- 1 pint water
- ½ pound butter
- ¾ pound flour
- 10 eggs
- 1 quart milk
- 2 cups sugar
- 1 cup flour
- 4 eggs
Method
- 1 Boil water and butter together. Stir in flour and boil for 5 minutes.
- 2 Stir in 10 eggs one at a time without beating.
- 3 Drop batter by spoonfuls onto a pan, leaving space between them.
- 4 Bake in a hot oven (425°F) for 15 minutes until golden.
- 5 For filling, boil milk. Beat 4 eggs, sugar, and 1 cup flour; stir into milk. Cook until thick, about 5 minutes.
- 6 Cut cooled puffs open and fill with the cream mixture.
