Cream Puffs With Pastry Cream

Ingredients

  • 1 pint water
  • ½ pound butter
  • ¾ pound flour
  • 10 eggs
  • 1 quart milk
  • 2 cups sugar
  • 1 cup flour
  • 4 eggs

Method

  1. 1 Boil water and butter together. Stir in flour and boil for 5 minutes.
  2. 2 Stir in 10 eggs one at a time without beating.
  3. 3 Drop batter by spoonfuls onto a pan, leaving space between them.
  4. 4 Bake in a hot oven (425°F) for 15 minutes until golden.
  5. 5 For filling, boil milk. Beat 4 eggs, sugar, and 1 cup flour; stir into milk. Cook until thick, about 5 minutes.
  6. 6 Cut cooled puffs open and fill with the cream mixture.
