Cream Puffs With Custard Filling

Ingredients

  • 1 cup boiling water
  • ½ cup shortening
  • 1 cup flour
  • 1/8 teaspoon salt
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1/3 cup cornstarch
  • 1/3 teaspoon salt
  • 1 egg
  • 2 cups scalded milk
  • 1 teaspoon vanilla extract

Method

  1. 1 Heat water and shortening in a saucepan until boiling.
  2. 2 Add flour and salt all at once; stir vigorously until mixed.
  3. 3 Remove from heat, cool slightly, then mix in unbeaten eggs one at a time.
  4. 4 Stir in baking powder, then drop spoonfuls onto a greased baking sheet.
  5. 5 Bake in a 425°F oven for 30 minutes until golden and puffed.
  6. 6 For filling, whisk sugar, cornstarch, salt, and egg; gradually stir in milk.
  7. 7 Cook in a double boiler for 15 minutes, stirring constantly until thick.
  8. 8 Cool filling slightly, stir in vanilla, and pipe into baked puffs.
