Cream Puffs With Custard Filling
Ingredients
- 1 cup boiling water
- ½ cup shortening
- 1 cup flour
- 1/8 teaspoon salt
- 3 eggs
- 2 teaspoons baking powder
- 1 cup sugar
- 1/3 cup cornstarch
- 1/3 teaspoon salt
- 1 egg
- 2 cups scalded milk
- 1 teaspoon vanilla extract
Method
- 1 Heat water and shortening in a saucepan until boiling.
- 2 Add flour and salt all at once; stir vigorously until mixed.
- 3 Remove from heat, cool slightly, then mix in unbeaten eggs one at a time.
- 4 Stir in baking powder, then drop spoonfuls onto a greased baking sheet.
- 5 Bake in a 425°F oven for 30 minutes until golden and puffed.
- 6 For filling, whisk sugar, cornstarch, salt, and egg; gradually stir in milk.
- 7 Cook in a double boiler for 15 minutes, stirring constantly until thick.
- 8 Cool filling slightly, stir in vanilla, and pipe into baked puffs.
