  • 1 egg white

Method

  1. 1 Combine sugar, boiling water, and cream of tartar in a saucepan. Stir until dissolved.
  2. 2 Boil the mixture without stirring until it threads when dropped from a spoon.
  3. 3 Whip the egg white to a stiff froth. Pour the hot syrup in a fine stream onto the egg white.
  4. 4 Beat the mixture until smooth and stiff enough to spread, but not too cold.
  5. 5 Pour the icing over the cake.
