Cream Of Tartar Swiss Meringue Icing
Ingredients
- 1 cup sugar
- ¼ cup boiling water
- 1/8 tsp cream of tartar
- 1 egg white
Method
- 1 Combine sugar, boiling water, and cream of tartar in a saucepan. Stir until dissolved.
- 2 Boil the mixture without stirring until it threads when dropped from a spoon.
- 3 Whip the egg white to a stiff froth. Pour the hot syrup in a fine stream onto the egg white.
- 4 Beat the mixture until smooth and stiff enough to spread, but not too cold.
- 5 Pour the icing over the cake.
