Cream Of Tartar Scones With Currants

Ingredients

  • 4 cups flour
  • 5 tablespoons Crisco
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 egg
  • sweet milk
  • currants or raisins (optional)

Method

  1. 1 Rub Crisco into flour, then mix in sugar, salt, baking soda, and cream of tartar.
  2. 2 Beat the egg. Mix half the egg with some sweet milk to form a soft dough with the dry ingredients.
  3. 3 Knead the dough very lightly on a floured board. Divide into five pieces, roll out, and cut into four small cakes each.
  4. 4 Place scones on a greased baking sheet. Brush with the remaining egg and bake in a 425°F oven for 10 minutes.
