Cream Of Tartar Ginger Beer With Lemon Slices

Ingredients

  • 2 gallons boiling water
  • 2 pounds brown sugar
  • 1.5 ounces cream of tartar
  • 1.5 ounces pounded ginger
  • 0.5 pint good yeast
  • 1-2 lemons, sliced (optional)

Method

  1. 1 Pour boiling water over brown sugar, cream of tartar, and ginger. Stir well.
  2. 2 Transfer mixture to a small cask or large container. Let cool until milk warm.
  3. 3 Add yeast, shake well, and seal tightly. Let ferment for 24 hours.
  4. 4 Bottle the liquid, corking tightly. Add lemon slices if desired.
  5. 5 Let bottle for 10 days until sparkling, then refrigerate and serve cold.
