Ingredients

  • 2 cups thinly sliced onions
  • 1 cup cold water
  • 1 cup milk
  • 2 tablespoons flour
  • Salt and white pepper to taste
  • 1 tablespoon butter per quart of soup

Method

  1. 1 Place sliced onions in a saucepan with cold water and cook until soft.
  2. 2 Rub the cooked onions through a fine sieve and return the puree to the saucepan.
  3. 3 Add milk and flour to the onion puree, stirring to dissolve the flour completely.
  4. 4 Bring the mixture to a boil and cook slowly for five minutes.
  5. 5 Season with salt and white pepper, then stir in butter before serving.
