Cream Of Onion Soup
Ingredients
- 2 cups thinly sliced onions
- 1 cup cold water
- 1 cup milk
- 2 tablespoons flour
- Salt and white pepper to taste
- 1 tablespoon butter per quart of soup
Method
- 1 Place sliced onions in a saucepan with cold water and cook until soft.
- 2 Rub the cooked onions through a fine sieve and return the puree to the saucepan.
- 3 Add milk and flour to the onion puree, stirring to dissolve the flour completely.
- 4 Bring the mixture to a boil and cook slowly for five minutes.
- 5 Season with salt and white pepper, then stir in butter before serving.
