Cream Of Green Peas Soup
Ingredients
- 1 quart green peas
- 1 slice white onion
- Boiling water
- 1 pint rich milk
- Salt to taste
- White pepper to taste
- Dash of cayenne
- 1 tbsp butter
- 1 tbsp flour
- 2 tbsp whipped cream
Method
- 1 Place peas and onion in a saucepan, cover with boiling water, and cook until tender.
- 2 Remove from heat and press the mixture through a purée sieve, using the cooking liquid.
- 3 Return the purée to the saucepan and bring to a boil.
- 4 Stir in milk, salt, white pepper, cayenne, and a roux made of butter and flour.
- 5 Simmer until thickened, then stir in whipped cream just before serving.
