Cream Of Green Peas Soup

Ingredients

  • 1 quart green peas
  • 1 slice white onion
  • Boiling water
  • 1 pint rich milk
  • Salt to taste
  • White pepper to taste
  • Dash of cayenne
  • 1 tbsp butter
  • 1 tbsp flour
  • 2 tbsp whipped cream

Method

  1. 1 Place peas and onion in a saucepan, cover with boiling water, and cook until tender.
  2. 2 Remove from heat and press the mixture through a purée sieve, using the cooking liquid.
  3. 3 Return the purée to the saucepan and bring to a boil.
  4. 4 Stir in milk, salt, white pepper, cayenne, and a roux made of butter and flour.
  5. 5 Simmer until thickened, then stir in whipped cream just before serving.
