Ingredients

  • 1 head celery, chopped fine
  • 4 cups chicken stock
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups boiling cream
  • Salt and pepper to taste

Method

  1. 1 Chop the celery fine and boil it in the chicken stock until soft.
  2. 2 Rub the cooked celery and stock through a sieve to create a smooth base.
  3. 3 Reheat the mixture, then stir in butter and flour. Boil while stirring to thicken.
  4. 4 Season to taste with salt and pepper, then stir in the boiling cream and serve.
