Cream Of Celery And Chicken Soup
Ingredients
- 1 head celery, chopped fine
- 4 cups chicken stock
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups boiling cream
- Salt and pepper to taste
Method
- 1 Chop the celery fine and boil it in the chicken stock until soft.
- 2 Rub the cooked celery and stock through a sieve to create a smooth base.
- 3 Reheat the mixture, then stir in butter and flour. Boil while stirring to thicken.
- 4 Season to taste with salt and pepper, then stir in the boiling cream and serve.
