Cream Of Asparagus Soup With Tips

Ingredients

  • 1 bunch asparagus
  • ½ onion, sliced
  • 1 tbsp butter
  • ½ tbsp flour
  • Salt and pepper to taste
  • 1 pint milk
  • 2 egg yolks
  • 4 tbsp cream

Method

  1. 1 Prepare asparagus; cut off 1-inch tips and set aside. Boil stalks and sliced onion in water until tender.
  2. 2 Press cooked stalks and onion through a sieve with their cooking water to create a purée.
  3. 3 Melt butter in a saucepan, stir in flour, then add asparagus purée and bring to a boil. Season with salt and pepper.
  4. 4 Cook asparagus tips in a little water until tender. Heat milk to boiling.
  5. 5 Remove soup from heat. Stir in hot milk, then quickly mix in egg yolks beaten with cream. Pour into tureen and add tips.
