Cream Of Asparagus Soup With Tips
Ingredients
- 1 bunch asparagus
- ½ onion, sliced
- 1 tbsp butter
- ½ tbsp flour
- Salt and pepper to taste
- 1 pint milk
- 2 egg yolks
- 4 tbsp cream
Method
- 1 Prepare asparagus; cut off 1-inch tips and set aside. Boil stalks and sliced onion in water until tender.
- 2 Press cooked stalks and onion through a sieve with their cooking water to create a purée.
- 3 Melt butter in a saucepan, stir in flour, then add asparagus purée and bring to a boil. Season with salt and pepper.
- 4 Cook asparagus tips in a little water until tender. Heat milk to boiling.
- 5 Remove soup from heat. Stir in hot milk, then quickly mix in egg yolks beaten with cream. Pour into tureen and add tips.
