Cream Muffins
Ingredients
- 2 cups pastry flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- ½ teaspoon salt
- ¼ cup butter or margarine
- 2 eggs, well beaten
- 7/8 cup thin cream
Method
- 1 Sift together pastry flour, baking powder, sugar, and salt.
- 2 Rub in butter with fingers, then add beaten eggs and cream. Mix thoroughly.
- 3 Pour batter into greased muffin pans or small fancy shaped tins.
- 4 Bake at 400°F for 12 minutes, then increase heat to 450°F for 5 minutes.
