Cream Muffins

Ingredients

  • 2 cups pastry flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • ¼ cup butter or margarine
  • 2 eggs, well beaten
  • 7/8 cup thin cream

Method

  1. 1 Sift together pastry flour, baking powder, sugar, and salt.
  2. 2 Rub in butter with fingers, then add beaten eggs and cream. Mix thoroughly.
  3. 3 Pour batter into greased muffin pans or small fancy shaped tins.
  4. 4 Bake at 400°F for 12 minutes, then increase heat to 450°F for 5 minutes.
