Cream And Butter Lemon Pie
Ingredients
- 2 lemons
- 3 eggs
- 2 tbsp melted butter
- 8 tbsp white sugar
- 1 cup sweet cream or milk
- pie crust (enough for 2 pies)
- 4 tbsp white sugar (for topping)
Method
- 1 Squeeze the juice of 2 lemons and grate the rind of 1 lemon.
- 2 In a bowl, stir together the yolks of 3 eggs, the white of 1 egg, 8 tbsp sugar, melted butter, lemon juice, and rind.
- 3 Mix in 1 cup of sweet cream or milk and beat for 1-2 minutes.
- 4 Pour the mixture into a pie plate lined with pastry.
- 5 Bake until the pastry is done and the filling is set.
- 6 While baking, beat the remaining egg white to stiff peaks and fold in 4 tbsp sugar.
- 7 Spread the meringue over the hot pies and return to the oven to bake until delicately browned.
