Cracked Wheat Bread
Ingredients
- 2.5 kg cracked whole wheat kernels
- 1 liter lukewarm water
- 1/4 of the flour (approx. 625g)
- Remaining flour (approx. 1.875 kg)
- Water for brushing
Method
- 1 Sift the cracked wheat through a fine hair sieve to remove bran.
- 2 Mix lukewarm water with 1/4 of the flour to form a batter.
- 3 Cover and let ferment in a warm place for 5-6 hours until bubbles form but it does not turn sour.
- 4 Knead the fermented batter thoroughly with the remaining flour until the dough does not stick.
- 5 Shape the dough into a loaf, place on a floured baking sheet, and let rise for 1-1.5 hours.
- 6 Brush with lukewarm water and bake in a hot oven for 1.5 to 2 hours, rotating halfway.
- 7 Check for doneness by tapping the bottom; it should sound hollow.
