Cracked Wheat Bread

Ingredients

  • 2.5 kg cracked whole wheat kernels
  • 1 liter lukewarm water
  • 1/4 of the flour (approx. 625g)
  • Remaining flour (approx. 1.875 kg)
  • Water for brushing

Method

  1. 1 Sift the cracked wheat through a fine hair sieve to remove bran.
  2. 2 Mix lukewarm water with 1/4 of the flour to form a batter.
  3. 3 Cover and let ferment in a warm place for 5-6 hours until bubbles form but it does not turn sour.
  4. 4 Knead the fermented batter thoroughly with the remaining flour until the dough does not stick.
  5. 5 Shape the dough into a loaf, place on a floured baking sheet, and let rise for 1-1.5 hours.
  6. 6 Brush with lukewarm water and bake in a hot oven for 1.5 to 2 hours, rotating halfway.
  7. 7 Check for doneness by tapping the bottom; it should sound hollow.
