Cowboy Caviar Bean Salsa
Ingredients
- 1 can kidney beans, drained (15 ounces)
- 1 can black beans, drained (15 ounces)
- 1 can corn, drained (15 ounces)
- 1 can crushed tomatoes (15 ounces)
- 1 can chopped green chilies (4 ounces)
- 1/4 cup finely chopped onion
- 3 limes, juiced (optional)
- oil (to taste)
- salt (to taste)
- pepper (to taste)
- hot sauce (to taste)
Method
- 1 In a large bowl, combine the drained kidney beans, black beans, corn, crushed tomatoes, chopped green chilies, and finely chopped onion.
- 2 Add lime juice and oil. Toss gently to combine. Taste and add salt, pepper, and hot sauce as desired.
- 3 Serve the salsa by itself, with raw vegetables, or with corn chips.
