Cowboy Caviar Bean Salsa

Ingredients

  • 1 can kidney beans, drained (15 ounces)
  • 1 can black beans, drained (15 ounces)
  • 1 can corn, drained (15 ounces)
  • 1 can crushed tomatoes (15 ounces)
  • 1 can chopped green chilies (4 ounces)
  • 1/4 cup finely chopped onion
  • 3 limes, juiced (optional)
  • oil (to taste)
  • salt (to taste)
  • pepper (to taste)
  • hot sauce (to taste)

Method

  1. 1 In a large bowl, combine the drained kidney beans, black beans, corn, crushed tomatoes, chopped green chilies, and finely chopped onion.
  2. 2 Add lime juice and oil. Toss gently to combine. Taste and add salt, pepper, and hot sauce as desired.
  3. 3 Serve the salsa by itself, with raw vegetables, or with corn chips.
