Cottage Pudding With Raisin Sauce

Ingredients

  • 1 cup sugar
  • 1 egg
  • 1 cup milk or water
  • 2 1/4 cups flour
  • 2 tbsp Crisco
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup sultana raisins
  • 1 tbsp Crisco
  • 1 cup sugar
  • 1 egg
  • 1 tsp flour
  • 1/2 tsp vanilla extract
  • 1 1/2 cups boiling water

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Cream 2 tbsp Crisco and 1 cup sugar; beat in egg, milk, vanilla, flour, baking powder, salt, and raisins.
  3. 3 Pour batter into a greased mold and bake for 25 minutes.
  4. 4 For sauce, mix 1 tbsp Crisco, 1 cup sugar, and 1 tsp flour in a saucepan.
  5. 5 Stir in egg and boiling water; boil for 3 minutes.
  6. 6 Remove from heat, stir in 1/2 tsp vanilla, and serve over the warm pudding.
