Cottage Pudding With Lemon Sauce
Ingredients
- 1 cup sugar
- 1 tbsp butter
- 2 eggs
- 1 cup milk
- 1 cup sifted flour
- 3 tsp baking powder
- Additional sugar for sprinkling
- 2 eggs (for sauce)
- 1 cup sugar (for sauce)
- 1 tbsp melted butter (for sauce)
- 1 tbsp cornstarch (for sauce)
- 1 cup boiling water (for sauce)
- Juice of 1 lemon (for sauce)
Method
- 1 Rub 1 cup sugar and 1 tbsp butter together. Beat in 2 eggs until light, then mix in 1 cup milk.
- 2 Sift 1 cup flour and 3 tsp baking powder together. Rub through sieve into the wet mixture and beat quickly.
- 3 Pour batter into a large or two small pudding dishes. Sprinkle tops with sugar.
- 4 Bake in a moderate oven (350°F) for 30-40 minutes until golden and set. Serve hot.
- 5 For sauce: Beat 2 eggs and 1 cup sugar light. Add 1 tbsp melted butter and 1 tbsp cornstarch.
- 6 Stir in 1 cup boiling water while cooking. Boil 5 minutes, stirring constantly. Remove from heat and stir in lemon juice.
