Cottage Cheese Stuffed Potatoes
Ingredients
- 4 large baking potatoes
- 1 cup cottage cheese, low-fat
- 2 tablespoons 1% milk
- 2 tablespoons chopped onion
- Paprika, for sprinkling
Method
- 1 Preheat oven to 400°F. Scrub potatoes and bake for 30-40 minutes until tender.
- 2 Slice potatoes in half lengthwise. Scoop out the inside, leaving a ½-inch border. Reserve the scooped potato flesh.
- 3 In a bowl, combine the scooped potato flesh, cottage cheese, milk, and chopped onion. Mix with a fork until light and fluffy.
- 4 Divide the mixture evenly among the potato shells. Sprinkle paprika on top.
- 5 Return to the oven for 5 minutes to reheat and warm through.
