Cottage Cheese Stuffed Potatoes

  • 4 large baking potatoes
  • 1 cup cottage cheese, low-fat
  • 2 tablespoons 1% milk
  • 2 tablespoons chopped onion
  • Paprika, for sprinkling

Method

  1. 1 Preheat oven to 400°F. Scrub potatoes and bake for 30-40 minutes until tender.
  2. 2 Slice potatoes in half lengthwise. Scoop out the inside, leaving a ½-inch border. Reserve the scooped potato flesh.
  3. 3 In a bowl, combine the scooped potato flesh, cottage cheese, milk, and chopped onion. Mix with a fork until light and fluffy.
  4. 4 Divide the mixture evenly among the potato shells. Sprinkle paprika on top.
  5. 5 Return to the oven for 5 minutes to reheat and warm through.
