Cottage Cheese Macaroni Bake
Ingredients
- 1 jar (24 oz) meatless, low-sodium spaghetti sauce
- 1/3 cup water
- 6 oz fat-free cottage cheese
- 1 egg, slightly beaten
- 1/2 teaspoon oregano
- 1 cup dry macaroni
- 4 oz part-skim shredded mozzarella cheese
Method
- 1 In a bowl, combine the spaghetti sauce and water.
- 2 In another bowl, mix the cottage cheese, beaten egg, and oregano.
- 3 Grease a 1-quart casserole dish.
- 4 Spoon 1/3 of the sauce mixture into the bottom of the dish.
- 5 Layer with 1 cup dry macaroni, half the cottage cheese mixture, half the mozzarella, and 1/3 of the remaining sauce.
- 6 Repeat the layers to use up all ingredients.
- 7 Cover with aluminum foil and bake at 350°F for 45 minutes.
- 8 Uncover and bake for 15 minutes longer until bubbly and cheese is melted.
