Cottage Cheese Macaroni Bake

Ingredients

  • 1 jar (24 oz) meatless, low-sodium spaghetti sauce
  • 1/3 cup water
  • 6 oz fat-free cottage cheese
  • 1 egg, slightly beaten
  • 1/2 teaspoon oregano
  • 1 cup dry macaroni
  • 4 oz part-skim shredded mozzarella cheese

Method

  1. 1 In a bowl, combine the spaghetti sauce and water.
  2. 2 In another bowl, mix the cottage cheese, beaten egg, and oregano.
  3. 3 Grease a 1-quart casserole dish.
  4. 4 Spoon 1/3 of the sauce mixture into the bottom of the dish.
  5. 5 Layer with 1 cup dry macaroni, half the cottage cheese mixture, half the mozzarella, and 1/3 of the remaining sauce.
  6. 6 Repeat the layers to use up all ingredients.
  7. 7 Cover with aluminum foil and bake at 350°F for 45 minutes.
  8. 8 Uncover and bake for 15 minutes longer until bubbly and cheese is melted.
