Cornstarch Thickened Vanilla Custard

Ingredients

  • 1 tablespoon cornstarch
  • 1 pint milk
  • 2 egg yolks
  • 2 oz granulated sugar
  • Vanilla or other flavoring

Method

  1. 1 Combine milk and sugar in a saucepan and bring to a boil.
  2. 2 Mix cornstarch with a little cold milk until smooth, then stir into the boiling milk.
  3. 3 Boil, stirring constantly, for 10 minutes.
  4. 4 Remove from heat and let cool slightly, then beat in egg yolks.
  5. 5 Return to heat briefly to cook eggs without curdling, then flavor and chill.
