  • 1 ½ cups water
  • ½ cup cornstarch
  • Zest of ¼ lemon
  • Juice of 2 lemons
  • 2 egg yolks
  • Egg whites (for meringue)

Method

  1. 1 In a saucepan, stir together sugar, water, and cornstarch until dissolved.
  2. 2 Bring to a boil and cook for five minutes, stirring constantly.
  3. 3 Remove from heat and stir in lemon zest, lemon juice, and egg yolks until well mixed.
