Cornstarch Lemon Pie With Meringue
Ingredients
- 1 cup sugar
- 1 ½ cups water
- ½ cup cornstarch
- Zest of ¼ lemon
- Juice of 2 lemons
- 2 egg yolks
- Egg whites (for meringue)
Method
- 1 In a saucepan, stir together sugar, water, and cornstarch until dissolved.
- 2 Bring to a boil and cook for five minutes, stirring constantly.
- 3 Remove from heat and stir in lemon zest, lemon juice, and egg yolks until well mixed.
- 4 Pour the mixture into a prepared pie plate.
- 5 Bake in a moderate oven (350°F) for 25 minutes.
- 6 Top with meringue made from egg whites and serve.
