Cornmeal Griddle Pancakes

Ingredients

  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons butter or margarine
  • 1 cup evaporated milk
  • 1 tablespoon vinegar
  • 1 egg
  • 1 3/4 cups boiling water

Method

  1. 1 Mix cornmeal, baking powder, salt, and sugar in a bowl.
  2. 2 Add butter to the dry mix. Bring 1 3/4 cups water to a boil and pour it into the bowl. Beat until well mixed.
  3. 3 Stir vinegar into evaporated milk. Add this mixture to the batter and beat in the egg.
  4. 4 Heat a griddle to 380°F or until a water drop dances. Lightly grease the surface.
  5. 5 Pour 3 tablespoons of batter per pancake. Cook until bubbles form, then flip and brown the other side.
