Cornmeal Griddle Pancakes
Ingredients
- 1 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons butter or margarine
- 1 cup evaporated milk
- 1 tablespoon vinegar
- 1 egg
- 1 3/4 cups boiling water
Method
- 1 Mix cornmeal, baking powder, salt, and sugar in a bowl.
- 2 Add butter to the dry mix. Bring 1 3/4 cups water to a boil and pour it into the bowl. Beat until well mixed.
- 3 Stir vinegar into evaporated milk. Add this mixture to the batter and beat in the egg.
- 4 Heat a griddle to 380°F or until a water drop dances. Lightly grease the surface.
- 5 Pour 3 tablespoons of batter per pancake. Cook until bubbles form, then flip and brown the other side.
