Cornmeal Griddle Cakes With Molasses
Ingredients
- 1 1/3 cups corn meal
- 1 1/2 cups boiling water
- 3/4 cup milk
- 1 tablespoon shortening
- 1 tablespoon molasses
- 2/3 cup flour
- 1 teaspoon salt
- 4 teaspoons baking powder
Method
- 1 Scald the corn meal with boiling water.
- 2 Stir in milk, melted shortening, and molasses.
- 3 Sift together flour, salt, and baking powder, then mix into the batter.
- 4 Cook on a hot greased griddle until browned on both sides.
- 5 Serve immediately with butter and syrup.
