Cornmeal Crusted Beef Loaf
Ingredients
- 1 pound ground beef
- 1 can (15 ounces) low-sodium cream-style corn
- 1/2 cup onion, diced
- 1 teaspoon garlic, finely chopped
- 1/2 cup water
- 1/2 cup yellow cornmeal
- 2 tablespoons dried egg mix or 1 egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Nonstick cooking spray
Method
- 1 Preheat oven to 375°F. In a large skillet, cook ground beef over medium heat for 8-10 minutes until browned. Drain the fat.
- 2 Add corn, diced onion, and chopped garlic to the skillet. Cook for an additional 10 minutes, stirring occasionally.
- 3 Stir in water, cornmeal, egg mix (or egg), salt, and pepper. Cook for 15 minutes, stirring well to combine.
- 4 Spray a loaf pan or large iron skillet with cooking spray. Transfer the meat mixture into the pan and form into a loaf shape.
- 5 Cover the pan with a lid or foil. Bake for 35-40 minutes until heated through.
