Cornmeal Crusted Beef Loaf

Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) low-sodium cream-style corn
  • 1/2 cup onion, diced
  • 1 teaspoon garlic, finely chopped
  • 1/2 cup water
  • 1/2 cup yellow cornmeal
  • 2 tablespoons dried egg mix or 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray

Method

  1. 1 Preheat oven to 375°F. In a large skillet, cook ground beef over medium heat for 8-10 minutes until browned. Drain the fat.
  2. 2 Add corn, diced onion, and chopped garlic to the skillet. Cook for an additional 10 minutes, stirring occasionally.
  3. 3 Stir in water, cornmeal, egg mix (or egg), salt, and pepper. Cook for 15 minutes, stirring well to combine.
  4. 4 Spray a loaf pan or large iron skillet with cooking spray. Transfer the meat mixture into the pan and form into a loaf shape.
  5. 5 Cover the pan with a lid or foil. Bake for 35-40 minutes until heated through.
