Cornmeal And Rice Spoon Bread
Ingredients
- 1 cup boiling water
- 1 cup white cornmeal
- 1 pinch salt
- 1 cup cold boiled rice
- 3 eggs, well beaten
- 2 tsp baking powder
- 1 ½ cups milk
- butter for greasing
Method
- 1 Pour boiling water over cornmeal and salt in a bowl.
- 2 Stir in cold boiled rice, beaten eggs, baking powder, and milk.
- 3 Mix thoroughly until well combined.
- 4 Pour batter into a buttered earthen baking dish, about two inches deep.
- 5 Bake until set and done, similar to a baked custard.
