Ingredients

  • 1 cup boiling water
  • 1 cup white cornmeal
  • 1 pinch salt
  • 1 cup cold boiled rice
  • 3 eggs, well beaten
  • 2 tsp baking powder
  • 1 ½ cups milk
  • butter for greasing

Method

  1. 1 Pour boiling water over cornmeal and salt in a bowl.
  2. 2 Stir in cold boiled rice, beaten eggs, baking powder, and milk.
  3. 3 Mix thoroughly until well combined.
  4. 4 Pour batter into a buttered earthen baking dish, about two inches deep.
  5. 5 Bake until set and done, similar to a baked custard.
