Cornflour And Wheatmeal Lemon Sponge With Vanilla
Ingredients
- 1/4 lb cornflour
- 1/4 lb wheatmeal
- 1/2 lb sifted sugar
- 10 eggs
- rind and juice of 1 lemon
- vanilla
Method
- 1 Separate the egg yolks from the whites.
- 2 Stir the yolks well, then gradually sift in the sugar and cornflour while stirring continuously.
- 3 Add the lemon juice and rind to the mixture.
- 4 Beat the egg whites to a firm froth and mix them thoroughly into the batter.
- 5 Pour the mixture into greased cake tins.
- 6 Bake immediately in a quick oven (425°F).
