Cornflour And Wheatmeal Lemon Sponge With Vanilla

  • 1/4 lb cornflour
  • 1/4 lb wheatmeal
  • 1/2 lb sifted sugar
  • 10 eggs
  • rind and juice of 1 lemon
  • vanilla

Method

  1. 1 Separate the egg yolks from the whites.
  2. 2 Stir the yolks well, then gradually sift in the sugar and cornflour while stirring continuously.
  3. 3 Add the lemon juice and rind to the mixture.
  4. 4 Beat the egg whites to a firm froth and mix them thoroughly into the batter.
  5. 5 Pour the mixture into greased cake tins.
  6. 6 Bake immediately in a quick oven (425°F).
