Cornflake Crusted Oven Fried Chicken
Ingredients
- 1/2 cup non-fat milk or buttermilk
- 1 teaspoon poultry seasoning
- 1 cup cornflakes, crumbled
- 1 1/2 tablespoons onion powder
- 1 1/2 tablespoons garlic powder
- 2 teaspoons black pepper
- 2 teaspoons dried crushed hot pepper
- 1 teaspoon ground ginger
- 4 skinless chicken breasts
- 4 skinless chicken drumsticks
- 1/16 teaspoon paprika
- Vegetable oil, for greasing pan
Method
- 1 Preheat oven to 350°F. Mix 1/2 teaspoon of poultry seasoning into the milk.
- 2 Combine remaining spices and cornflake crumbs in a plastic bag.
- 3 Dip chicken in milk, shake off excess, then shake in the bag to coat.
- 4 Refrigerate coated chicken for 1 hour.
- 5 Remove from fridge, sprinkle lightly with paprika, and place on a greased baking pan.
- 6 Cover with foil and bake for 40 minutes. Remove foil and bake 30-40 minutes more until meat pulls from bone easily. Do not turn.
