Corn Rye Whole Wheat Raisin Nut Muffins
Ingredients
- 1/3 cup boiling water
- 1 cup cornmeal
- 1/2 teaspoon soda
- 1/2 cup molasses
- 1 cup whole wheat flour
- 1 cup rye flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/3 cup raisins, cut in halves
- 1/2 cup chopped nuts
- 2 tablespoons fat
Method
- 1 Scald the cornmeal with boiling water. Mix in the soda and molasses.
- 2 Combine the whole wheat flour, rye flour, baking powder, and salt.
- 3 Mix the dry ingredients into the wet mixture thoroughly.
- 4 Stir in the milk, raisins, nuts, and fat.
- 5 Pour into muffin pans and bake for one-half hour.
