Corn Rye Whole Wheat Raisin Nut Muffins

Ingredients

  • 1/3 cup boiling water
  • 1 cup cornmeal
  • 1/2 teaspoon soda
  • 1/2 cup molasses
  • 1 cup whole wheat flour
  • 1 cup rye flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/3 cup raisins, cut in halves
  • 1/2 cup chopped nuts
  • 2 tablespoons fat

Method

  1. 1 Scald the cornmeal with boiling water. Mix in the soda and molasses.
  2. 2 Combine the whole wheat flour, rye flour, baking powder, and salt.
  3. 3 Mix the dry ingredients into the wet mixture thoroughly.
  4. 4 Stir in the milk, raisins, nuts, and fat.
