Corn Oyster Fritters
Ingredients
- 1 cup corn kernels
- 2 eggs, well-beaten
- 2 tablespoons flour
- ½ teaspoon salt
- dash of paprika
- oil for frying
Method
- 1 In a bowl, combine corn, beaten eggs, flour, salt, and paprika. Mix until just combined.
- 2 Heat oil in a skillet over medium-high heat until shimmering.
- 3 Drop spoonfuls of the mixture into the hot oil.
- 4 Fry until golden brown on the bottom, then flip and brown the other side. Serve immediately.
