Corn Fritters With Parsley
Ingredients
- 2 medium ears of corn
- 1 well-beaten egg
- 2 tablespoons finely minced parsley
- ¾ cup flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- oil or fat for frying
Method
- 1 Score and scrape the kernels from two medium ears of corn into a bowl.
- 2 Add the beaten egg, minced parsley, flour, baking powder, salt, and pepper.
- 3 Beat the mixture thoroughly until well combined.
- 4 Fry spoonfuls in hot fat or bake on a hot griddle until golden brown.
