Corn Flour And White Flour Muffins With Baking Powder
Ingredients
- 2 eggs
- ½ cup white flour
- 1 cup milk
- 1 cup corn flour
- 1 tablespoon butter
- 1 teaspoon salt
- 1 heaping teaspoon baking powder
Method
- 1 Pour enough boiling water over the corn flour to wet it and burst the starch grains.
- 2 Beat the eggs until very light.
- 3 Mix the dry ingredients into the corn flour, then add the eggs, milk, and finally the butter.
- 4 Bake in a hot oven (425°F) for twenty-five minutes.
