Corn Chowder With Bacon And Potatoes

Ingredients

  • 4 potatoes, peeled and sliced
  • 2 onions, sliced
  • ½ lb bacon, cut into small pieces
  • 1 quart grated corn
  • ½ pint boiling water
  • 1 pint hot milk
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 6 water crackers, broken
  • 1 egg yolk, beaten

Method

  1. 1 Fry bacon and onions in a saucepan until lightly browned.
  2. 2 Layer potatoes, bacon mixture, and corn in the saucepan.
  3. 3 Add boiling water and simmer for 30 minutes.
  4. 4 Stir in hot milk, then thicken with butter and flour rubbed smooth.
  5. 5 Add broken water crackers and the beaten egg yolk.
  6. 6 Serve immediately.
