Corn Chowder With Bacon And Potatoes
Ingredients
- 4 potatoes, peeled and sliced
- 2 onions, sliced
- ½ lb bacon, cut into small pieces
- 1 quart grated corn
- ½ pint boiling water
- 1 pint hot milk
- 1 tablespoon butter
- 2 tablespoons flour
- 6 water crackers, broken
- 1 egg yolk, beaten
Method
- 1 Fry bacon and onions in a saucepan until lightly browned.
- 2 Layer potatoes, bacon mixture, and corn in the saucepan.
- 3 Add boiling water and simmer for 30 minutes.
- 4 Stir in hot milk, then thicken with butter and flour rubbed smooth.
- 5 Add broken water crackers and the beaten egg yolk.
- 6 Serve immediately.
