Cooked Mustard Salad Dressing
Ingredients
- 1 tsp salt
- 1 tsp mustard
- 1 ½ tsp sugar
- Few grains cayenne pepper
- ¾ tbsp flour
- 2 egg yolks
- ¾ cup scalded milk
- ½ cup hot vinegar
- 1 ½ tsp melted butter
Method
- 1 Mix salt, mustard, sugar, cayenne, and flour in a bowl.
- 2 Whisk in egg yolks until thoroughly combined.
- 3 Add scalded milk and place over a double boiler.
- 4 Stir in hot vinegar and cook, stirring constantly, until thickened.
- 5 Remove from heat, stir in melted butter, and cool before using.
