Cooked Mustard Salad Dressing

Ingredients

  • 1 tsp salt
  • 1 tsp mustard
  • 1 ½ tsp sugar
  • Few grains cayenne pepper
  • ¾ tbsp flour
  • 2 egg yolks
  • ¾ cup scalded milk
  • ½ cup hot vinegar
  • 1 ½ tsp melted butter

Method

  1. 1 Mix salt, mustard, sugar, cayenne, and flour in a bowl.
  2. 2 Whisk in egg yolks until thoroughly combined.
  3. 3 Add scalded milk and place over a double boiler.
  4. 4 Stir in hot vinegar and cook, stirring constantly, until thickened.
  5. 5 Remove from heat, stir in melted butter, and cool before using.
