Cold Duck With Mashed Chestnut Border

Ingredients

  • 4 slices cold duck
  • 1 quart chestnuts
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Olives or red currant jelly for garnish

Method

  1. 1 Arrange slices of cold duck on a serving platter.
  2. 2 Shell and blanch the chestnuts, then boil until soft. Drain and press them through a colander.
  3. 3 Mix the mashed chestnuts with butter, salt, and pepper.
  4. 4 Arrange the chestnut mixture around the duck. Garnish with olives or bits of red currant jelly.
