Cold Duck With Mashed Chestnut Border
Ingredients
- 4 slices cold duck
- 1 quart chestnuts
- 1 tablespoon butter
- Salt and pepper to taste
- Olives or red currant jelly for garnish
Method
- 1 Arrange slices of cold duck on a serving platter.
- 2 Shell and blanch the chestnuts, then boil until soft. Drain and press them through a colander.
- 3 Mix the mashed chestnuts with butter, salt, and pepper.
- 4 Arrange the chestnut mixture around the duck. Garnish with olives or bits of red currant jelly.
