Cold Boiled Potato Salad With Beetroot
Ingredients
- 1 lb cold boiled potatoes
- 1 onion, grated fine
- Watercress or mustard and cress
- Boiled and sliced beetroot
- Pepper and salt to taste
- Oil and vinegar
- Hard-boiled eggs, sliced (optional)
- Sliced apples or orange pieces (optional)
Method
- 1 Cut the cold boiled potatoes into pieces.
- 2 Grate the onion finely and mix with the potatoes.
- 3 Add watercress (or mustard/cress) and sliced boiled beetroot.
- 4 Season with pepper, salt, oil, and vinegar.
- 5 Optionally add sliced hard-boiled eggs, apples, or orange pieces.
- 6 Note: If using oranges, omit the onion.
