Cold Beef Vinaigrette Salad With Gherkins And Capers
Ingredients
- cold lean beef, sliced thin
- 1 onion, finely chopped
- fresh chervil
- 2-3 gherkins, cut up
- 1 tsp capers
- olive oil
- vinegar
- juice of ½ lemon
- salt
- pepper
Method
- 1 Slice cold, lean beef into narrow, thin slices.
- 2 Place beef in a bowl with finely chopped onion, chervil, cut-up gherkins, and capers.
- 3 Pour oil, a little vinegar, and lemon juice over the mixture.
- 4 Season with salt and pepper, toss well together, and serve immediately.
