Cold Beef Salad With Lemon Mustard Dressing

Ingredients

  • cold cooked beef, sliced thin
  • 1 onion or shallot, sliced
  • juice of 1-2 lemons
  • 1 tbsp finely chopped parsley
  • 1 tbsp fine bread crumbs
  • 2 tbsp oil
  • 1 tsp mustard

Method

  1. 1 Slice the cold beef and onion or shallot as thinly as possible.
  2. 2 Squeeze lemon juice over the beef and onion, then beat them between two plates until well combined and sharp.
  3. 3 Transfer the beef to a serving dish, removing the onion slices.
  4. 4 Strew parsley and bread crumbs over the beef, then pour on a mixture of oil and mustard.
  5. 5 Garnish with sliced lemon and serve.
