Coffee Raisin Layer Cake With Brown Sugar Frosting

Ingredients

  • 1 cup dark brown sugar
  • 2/3 cup strong coffee
  • 3 egg yolks
  • 1/2 cup Crisco
  • 1 tablespoon molasses
  • 1/4 cup raisins
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon powdered cinnamon
  • 1/2 teaspoon powdered cloves
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup Crisco
  • 1 cup granulated sugar
  • 3 egg whites
  • 2/3 cup milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups dark brown sugar
  • 3/4 cup water
  • 1 tablespoon Crisco
  • 1 teaspoon vanilla extract
  • 1 cup chopped raisins

Method

  1. 1 Cream 1/2 cup Crisco and 1 cup dark brown sugar. Add 3 beaten egg yolks, coffee, and molasses.
  2. 2 Mix in 2 cups flour, baking powder, spices, salt, and raisins. Divide batter into two greased and floured layer tins.
  3. 3 Bake in a moderately hot oven (375°F) for 20 minutes.
  4. 4 Cream 1/2 cup Crisco and 1 cup granulated sugar. Add milk, vanilla, flour, baking powder, and salt.
  5. 5 Fold in 3 stiffly beaten egg whites. Bake in two layers.
  6. 6 Boil 2 cups brown sugar and 3/4 cup water until it forms a soft ball (240°F).
  7. 7 Remove from heat, add 1 tablespoon Crisco and 1 teaspoon vanilla. Beat until creamy.
  8. 8 Stir in 1 cup chopped raisins. Spread frosting between and on top of cake layers. Allow to dry.
