Coffee Raisin Layer Cake With Brown Sugar Frosting
Ingredients
- 1 cup dark brown sugar
- 2/3 cup strong coffee
- 3 egg yolks
- 1/2 cup Crisco
- 1 tablespoon molasses
- 1/4 cup raisins
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon powdered cinnamon
- 1/2 teaspoon powdered cloves
- 1/2 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1/2 cup Crisco
- 1 cup granulated sugar
- 3 egg whites
- 2/3 cup milk
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups dark brown sugar
- 3/4 cup water
- 1 tablespoon Crisco
- 1 teaspoon vanilla extract
- 1 cup chopped raisins
Method
- 1 Cream 1/2 cup Crisco and 1 cup dark brown sugar. Add 3 beaten egg yolks, coffee, and molasses.
- 2 Mix in 2 cups flour, baking powder, spices, salt, and raisins. Divide batter into two greased and floured layer tins.
- 3 Bake in a moderately hot oven (375°F) for 20 minutes.
- 4 Cream 1/2 cup Crisco and 1 cup granulated sugar. Add milk, vanilla, flour, baking powder, and salt.
- 5 Fold in 3 stiffly beaten egg whites. Bake in two layers.
- 6 Boil 2 cups brown sugar and 3/4 cup water until it forms a soft ball (240°F).
- 7 Remove from heat, add 1 tablespoon Crisco and 1 teaspoon vanilla. Beat until creamy.
- 8 Stir in 1 cup chopped raisins. Spread frosting between and on top of cake layers. Allow to dry.
