Coffee Praline Ice Cream
Ingredients
- 5 egg yolks
- 3 tbsp sugar syrup
- 4 tbsp strong black coffee
- 3 tbsp praline powder (optional)
- 1 pint heavy cream, whipped to stiff peaks
Method
- 1 In a saucepan, beat egg yolks until light. Stir in sugar syrup and coffee.
- 2 Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
- 3 Transfer to a bowl and beat until completely cool and light.
- 4 Fold in praline powder if using, then gently fold in the whipped cream.
- 5 Pour into a 3-pint mold, pack with ice and salt, and freeze for 4 hours.
