Coffee Praline Ice Cream

Ingredients

  • 5 egg yolks
  • 3 tbsp sugar syrup
  • 4 tbsp strong black coffee
  • 3 tbsp praline powder (optional)
  • 1 pint heavy cream, whipped to stiff peaks

Method

  1. 1 In a saucepan, beat egg yolks until light. Stir in sugar syrup and coffee.
  2. 2 Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
  3. 3 Transfer to a bowl and beat until completely cool and light.
  4. 4 Fold in praline powder if using, then gently fold in the whipped cream.
  5. 5 Pour into a 3-pint mold, pack with ice and salt, and freeze for 4 hours.
