Coffee Layer Cake With Cream Filling

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup cornstarch
  • 1 1/4 cups flour
  • 1/2 tsp cream of tartar
  • 1 pinch baking soda
  • 3 egg whites
  • 1 cup milk
  • 1 cup strong coffee
  • 1 cup sugar
  • 3 egg yolks
  • 3 tbsp flour
  • 2 tbsp butter
  • confectioners' sugar

Method

  1. 1 Cream 1/2 cup butter and 1 cup sugar. Add 1/2 cup milk.
  2. 2 Sift in 1/2 cup cornstarch, 1 1/4 cups flour, 1/2 tsp cream of tartar, and a pinch of baking soda.
  3. 3 Fold in stiffly beaten whites of 3 eggs. Bake in buttered layer-cake tins for 30 minutes.
  4. 4 Cook 1 cup milk, 1 cup strong coffee, and 1 cup sugar in a double boiler.
  5. 5 Thicken with 3 egg yolks and 3 tbsp flour rubbed smooth with cold milk. Stir while cooking.
  6. 6 Remove from heat, add 2 tbsp butter, and cool. Spread between layers and ice with confectioners' sugar moistened with coffee.
