Coffee Layer Cake With Cream Filling
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 1/2 cup milk
- 1/2 cup cornstarch
- 1 1/4 cups flour
- 1/2 tsp cream of tartar
- 1 pinch baking soda
- 3 egg whites
- 1 cup milk
- 1 cup strong coffee
- 1 cup sugar
- 3 egg yolks
- 3 tbsp flour
- 2 tbsp butter
- confectioners' sugar

Method
- 1 Cream 1/2 cup butter and 1 cup sugar. Add 1/2 cup milk.
- 2 Sift in 1/2 cup cornstarch, 1 1/4 cups flour, 1/2 tsp cream of tartar, and a pinch of baking soda.
- 3 Fold in stiffly beaten whites of 3 eggs. Bake in buttered layer-cake tins for 30 minutes.
- 4 Cook 1 cup milk, 1 cup strong coffee, and 1 cup sugar in a double boiler.
- 5 Thicken with 3 egg yolks and 3 tbsp flour rubbed smooth with cold milk. Stir while cooking.
- 6 Remove from heat, add 2 tbsp butter, and cool. Spread between layers and ice with confectioners' sugar moistened with coffee.
