Coffee Ice Cream With Egg White

  • Water
  • Sugar
  • Cream
  • 1 egg white, unbeaten

Method

  1. 1 Brew coffee by placing coffee and water in a double boiler. Boil the surrounding water for at least 20 minutes.
  2. 2 Strain the coffee through two layers of cheesecloth. Add sugar and stir until dissolved. Let cool completely.
  3. 3 Add cream and the unbeaten white of one egg to the cold coffee mixture.
  4. 4 Freeze in an ice cream freezer, turning slowly. Stop when the consistency is like a soft mush.
  5. 5 Serve in coffee cups, plain or topped with whipped cream.
