Ingredients

  • 6 cups milk
  • 8 egg yolks
  • 8 tablespoons sugar
  • 1 cup strong black coffee

Method

  1. 1 Beat 8 egg yolks with 8 tablespoons of sugar.
  2. 2 Thicken 6 cups of boiling milk with the egg mixture.
  3. 3 Stir in 1 cup of strong black coffee.
  4. 4 Strain the mixture into custard cups.
  5. 5 Place cups in a pan of water reaching halfway up the sides.
  6. 6 Simmer for 20 minutes, then serve cold.
