Coffee Custard Ice Cream
Ingredients
- 1 quart rich milk
- 3/4 pound sugar
- 5 ounces coffee
- 8 egg yolks
Method
- 1 Grind the coffee and stir it into half a pint of boiling milk, then set aside.
- 2 Put the remaining milk in a double boiler.
- 3 Beat the egg yolks and sugar together until light.
- 4 Stir the egg mixture into the hot milk and stir briskly until it thickens.
- 5 Add the milk and coffee mixture, then turn it into a bowl.
- 6 Let it stand until the last moment, strain, and freeze.
