Coffee Custard Ice Cream

Ingredients

  • 1 quart rich milk
  • 3/4 pound sugar
  • 5 ounces coffee
  • 8 egg yolks

Method

  1. 1 Grind the coffee and stir it into half a pint of boiling milk, then set aside.
  2. 2 Put the remaining milk in a double boiler.
  3. 3 Beat the egg yolks and sugar together until light.
  4. 4 Stir the egg mixture into the hot milk and stir briskly until it thickens.
  5. 5 Add the milk and coffee mixture, then turn it into a bowl.
  6. 6 Let it stand until the last moment, strain, and freeze.
