Coffee Buttercream Layer Cake
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 4 oz powdered sugar
- 4 egg yolks
- 2 egg whites
- strong brewed coffee, cooled
- sponge biscuits
Method
- 1 Cream the butter and powdered sugar together until well mixed.
- 2 Add the egg yolks one at a time, mixing thoroughly after each addition.
- 3 Stir in the egg whites and add boiling coffee essence drop by drop to taste.
- 4 Line a mold with sponge biscuits, then layer the cream mixture and biscuits alternately.
- 5 Refrigerate overnight and serve the following day.
