Coffee Buttercream Layer Cake

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 oz powdered sugar
  • 4 egg yolks
  • 2 egg whites
  • strong brewed coffee, cooled
  • sponge biscuits

Method

  1. 1 Cream the butter and powdered sugar together until well mixed.
  2. 2 Add the egg yolks one at a time, mixing thoroughly after each addition.
  3. 3 Stir in the egg whites and add boiling coffee essence drop by drop to taste.
  4. 4 Line a mold with sponge biscuits, then layer the cream mixture and biscuits alternately.
  5. 5 Refrigerate overnight and serve the following day.
