Coffee And Maple Caramels
Ingredients
- 1 cup sugar
- 3/4 cup cream
- 1 tsp vanilla extract
- 1/2 cup cream
- 1/4 cup strong coffee
- 1 cup maple syrup
Method
- 1 Combine 1 cup sugar and 3/4 cup cream in a saucepan.
- 2 Stir constantly over heat until the mixture reaches the hard-ball stage.
- 3 Remove from heat and stir in 1 tsp vanilla extract.
- 4 Pour onto an oiled slab or into greased tins to set.
- 5 For coffee caramels, substitute 1/2 cup cream and 1/4 cup strong coffee for part of the cream.
- 6 For maple caramels, replace the sugar with 1 cup maple syrup and omit the vanilla.
