Coconut Swiss Meringue Filling
Ingredients
- 1 cup sugar
- ½ cup water
- 2 egg whites, stiffly beaten
- 1 tsp vanilla extract
- 1 cup shredded coconut
Method
- 1 Boil sugar and water until they form a soft ball when tested in cold water.
- 2 Pour the hot syrup slowly into the stiffly beaten egg whites, beating constantly.
- 3 When the mixture is stiff, add vanilla and coconut.
- 4 Spread between layers of cake.
