Coconut Swiss Meringue Filling

Ingredients

  • 1 cup sugar
  • ½ cup water
  • 2 egg whites, stiffly beaten
  • 1 tsp vanilla extract
  • 1 cup shredded coconut

Method

  1. 1 Boil sugar and water until they form a soft ball when tested in cold water.
  2. 2 Pour the hot syrup slowly into the stiffly beaten egg whites, beating constantly.
  3. 3 When the mixture is stiff, add vanilla and coconut.
  4. 4 Spread between layers of cake.
