Coconut Rose Water Puff Pastry Tart
Ingredients
- 4 oz butter
- 4 oz powdered sugar
- 1/2 tsp rose water
- 1/4 cup mixed wine and brandy
- 6 egg whites
- 1/4 lb coconut
- puff pastry
- loaf sugar for garnish
Method
- 1 Remove the brown skin from the coconut, wash, dry, and grate it finely.
- 2 Cream the butter and powdered sugar together until light and fluffy.
- 3 Beat the egg whites until stiff peaks form, then fold into the butter mixture.
- 4 Stir in the grated coconut, rose water, and the mixed wine and brandy.
- 5 Line a dish with puff pastry, pour in the mixture, and bake at 350°F for 30 minutes.
- 6 Let cool and grate loaf sugar over the top before serving.
