Coconut Rice Flour Gulab Jamuns
Ingredients
- 1 lb rice flour (or all-purpose flour)
- 2 eggs
- Salt
- Shredded coconut
- Coconut milk
- Oil for frying
- 1 lb white sugar
- Water (for syrup)
Method
- 1 Combine rice flour, eggs, salt, shredded coconut, and enough coconut milk to form a soft dough. Knead well.
- 2 Cover the dough with a damp cloth and let rest briefly. Oil your fingers and mold the dough into small balls the size of pecans.
- 3 Fry the balls in hot oil until golden brown, similar to frying doughnuts. Remove and let them cool completely.
- 4 Prepare a sugar syrup by dissolving sugar in water and boiling until thick. Let the syrup cool slightly.
- 5 Add the cooled gulab jamans to the syrup and stir gently for a few minutes until coated. Remove and spread on oiled paper to dry.
