  • 1 large coconut (grated finely)
  • 1 cup sugar (equal weight to coconut)
  • ½ cup butter (equal weight to coconut)
  • 4 egg yolks
  • Coconut milk
  • 4 egg whites
  • Puff pastry

Method

  1. 1 Grate the coconut finely and mix with an equal weight of sifted sugar.
  2. 2 Beat the butter to a cream and mix with the coconut-sugar blend, egg yolks, and coconut milk.
  3. 3 Whisk the egg whites to a strong froth and fold into the mixture.
  4. 4 Line a tart dish with puff pastry and pour in the pudding mixture.
  5. 5 Cover the top with a buttered sheet of paper to prevent browning.
