Coconut Pudding In Puff Pastry
Ingredients
- 1 large coconut (grated finely)
- 1 cup sugar (equal weight to coconut)
- ½ cup butter (equal weight to coconut)
- 4 egg yolks
- Coconut milk
- 4 egg whites
- Puff pastry
Method
- 1 Grate the coconut finely and mix with an equal weight of sifted sugar.
- 2 Beat the butter to a cream and mix with the coconut-sugar blend, egg yolks, and coconut milk.
- 3 Whisk the egg whites to a strong froth and fold into the mixture.
- 4 Line a tart dish with puff pastry and pour in the pudding mixture.
- 5 Cover the top with a buttered sheet of paper to prevent browning.
- 6 Bake in a slow oven (300°F) for one hour.
