Coconut Lobster Curry

Ingredients

  • 1½ tbsp butter
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 small piece fresh ginger root, grated
  • 1½ tbsp cornstarch
  • 1½ tbsp curry powder
  • 1 pint milk
  • 1 cup grated coconut
  • 2 lb lobster meat
  • Salt and pepper to taste

Method

  1. 1 Grate the coconut and soak it in the pint of milk for one hour.
  2. 2 Sauté the chopped onion and minced garlic in butter until softened.
  3. 3 Stir in cornstarch, curry powder, salt, and pepper; cook until frothy.
  4. 4 Strain the milk from the coconut and add it gradually to the pan.
  5. 5 Bring the sauce to a boil, then add the lobster meat and heat through.
