Coconut Lobster Curry
Ingredients
- 1½ tbsp butter
- ½ onion, chopped
- 1 clove garlic, minced
- 1 small piece fresh ginger root, grated
- 1½ tbsp cornstarch
- 1½ tbsp curry powder
- 1 pint milk
- 1 cup grated coconut
- 2 lb lobster meat
- Salt and pepper to taste
Method
- 1 Grate the coconut and soak it in the pint of milk for one hour.
- 2 Sauté the chopped onion and minced garlic in butter until softened.
- 3 Stir in cornstarch, curry powder, salt, and pepper; cook until frothy.
- 4 Strain the milk from the coconut and add it gradually to the pan.
- 5 Bring the sauce to a boil, then add the lobster meat and heat through.
